Organic hams and sausages from Jabugo.
In the region of Jabugo in Sierra de Huelva, in the Natural Park Sierra de Aracena and Picos de Aroche, declared a Biosphere Reserve, a place rich environment.
We feed our animals with feed that we get our grind on the same farm from corn and pea green certificates, as well as our own production of squash and, of course, when you open the acorn of mountaineers period (between the months of October to February).
Our animals, Iberian pig breed Silvela live in freedom, in natural conditions are suitable for that and all they need to enjoy a life without suffering.
We care that the number of animals is in proportion to the acres in the estate to ensure optimal and sustainable resource.
Our pigs (or Guarro) are always controlled by the regulator organimo in certifying organic production.

Preparation:
The organic production, to be understood as a way of life is not just about a healthy and balanced diet for our animals. Certain products, to achieve their fullest potential, entailing far from industrial and economies of scale.
The production of our hams and shoulder, spine rods, Lomita, chorizo sausages and must pass by a delicate craft, to give them a touch exact salting and ripening at times also required. Care (and love) that do this work fills us with pride when we get the flavors that characterize our production, widely recognized in the area.
Our years of experience help us determine when a ibérico is ready yet or if you need some more time to care or be sold.
Our production, being limited, we can also focus on these issues to the point and idiosyncrasies that characterize our hams, loins, etc.
Mechanization is only used for those tasks that involve no impact on the quality of the product.
